Chef Suraphol Klaithong of Bangkok came up with a winning recipe when he created the mango and sticky rice cake with coconut cream sauce. It gives a modern twist to a traditional Thai dish that dates back to the reign of King Rama III. In the past, khao niew mamuang (mango and sticky rice) was served on a footed tray with nam ya uthai, a drink decorated with a scattering of jasmine petals. This fragrant herbal drink acted as an antidote to the heat and thirst generated by the sticky rice.
